Do you mean a place just serving Spanish (non-tourist) food or somewhere simply owned by Spaniards?
Assuming the former, then I don't know of any "special occasion" places in CSV, so you'd probably need to look more in the Pollensa or Alcudia area. Have a trawl through through the posts in the this sub-forum and the Alcudia sub-forum.
If it was me, places I'd consider would be Clivia and 365 in Pollensa; La Llonja, Stay (lots of folk like it at Stay, although I had a poor meal in 2008 and wouldnt be going back in a hurry) or, possibly, Ca'n Cuarassa in the Port; Jardin or Satyricon in Alcudia. All of them offering modern Spanish cuisine.

Rest.Cala Barques in CSV do lovely authentic food plus a perfect view over the bay.
