Amazingly, I've had a reply back from aigua@ajpollenca.net, with regards to the water hardness rating 
Just for info (Google translated - good ol' Google!):
'I inform you that the current hardness of drinking water supplied by EMSER 2002 SLU Cala San Vincente is 545mg / l CaCO3 (equivalent 54,5º French Degrees)'.

That is a good result.
Water hardness is normally given in French degrees ( ppm ).
Anything below 20 ppm is considered to be soft and anything below 60 ppm only slightly hard.
Apparently a lot of Pollensa´s water is currently coming from a desalination plant, so it wouldn´t be surprsing that it were harder during the winter.
Any hardware store or even a chemist will sell you a small water testing kit.

54.5 French degrees = very hard water.

I always thought that PPM was the same as french degrees. I am also surprised that it is so hard as they are trying not to use the wells so they don´t become even saltier. I was told that nearly 60% of the water comes from the desalination plant.
